Try this super cool and easy to make ‘mini’ salmon one pot dish.
1 x salmon fillet
A handful of new potatoes that cover the bottom of the dish
A handful of asparagus tips
Vine ripened tomatoes
Olive oil (1/2 tbsp)
Heat your oven to 220 degrees. Halve the new potatoes pour 1 tbsp of olive oil into the dish, throw in the potatoes and cook for 25 minutes.
Take the dish out and place the asparagus tips in and return to the oven for 15 minutes
When the 15 minutes is up, add the salmon and tomatoes and a drizzle of balsamic vinegar and return back to the over for a further 15 minutes To finish off cooking
Then simply get stuck in!
